Taco Salad!





I love taco salad. I have always made it on a bed of broken corn chips, however that is not how it is served at a restaurant. To make a taco salad shell make a ball (for each taco salad) out of foil. I loosely scrunch a sheet of foil into a shape of a ball. The ball should be roughly 3 inches, about the size of the "bowl" you want. Put a flour tortilla over the ball and spray with cooking spray. The tortilla will start to drape itself over the ball of foil in the oven. Bake in a 425 oven for 6-8 mins, watch for the tortillas to look golden brown. Remove the tortilla's from the oven, toss the balls, or save for a later date :) Then fill with your choice of seasoned beef, shredded chicken, beans, lettuce, tomatoes, cheese, peppers...you get the idea. A great way to toss in tons of veggies. Ta Da! Yum Yum.

Yeah! This is exactly what I was planning on making on Sunday and was just going to use tortilla chips, but now I'm going to try the taco shell bowls! Thank you! :)

I found another recipe for the shells that seems like it makes them get crisper...if you want it, I'll post it. But I have only tried this way. They came out good but not as crisp as the restaurant- but this other recipe claims to really make them crunchy. Let me know if you want me to post it and try it. ;)

Thanks Amber, Cari's taco bowls turned out great! Now I'm going to try making them sometime too. I'm sure glad you girls met at that laundromat years ago :P :) (hehehe)

Ahh, Amber and her mexican wonders. I always loved your recipe for navajo tacos...I guess that's indian, not mexican, but pretty close! I have also made taco bowls using oven-safe bowls. Just invert the bowl on a cookie sheet and lay a tortilla on top of it. I always spray with olive oil spray because it makes me feel like the barefoot contessa!

I LOVE the Barefoot Contessa, that is so funny that you say that cause today I was making chocochip cookies and I had my bowl of sifted dry ingredients and I was adding them to the mixer while it was going and I totally felt like her ;) When are we going to get a recipe from you?? Of course I remember you as being the type that throws spices in and it turns out great- but no recipe ;)
